MURUA" manufacturing by immersion in water

Recent studies carried out as part of a line of research financed by the ADER (Government of La Rioja), in collaboration with Excell Laboratories, the Pernod Ricard winery group and the University of La Rioja, have made it possible to determine the influence of the different ways of making barrels on the final characteristics of the wine. Among other factors, the process of immersion in hot water before bending the barrel, which is the traditional way of producing barrels at Tonelería Murúa, has been evaluated. The aromatic and gustatory particularities that this treatment imprints on the wines during aging have been manifested at the analytical and sensory level. The ellagic tannin content decreased by 14% in the barrels produced using the immersion process, while the barrels aged directly in the fire showed a higher tannic load in the mouth.
